Uh, so guess what.

I love tofu. Not like, I ate it whilst I was a vegetarian. Not, it was pressured upon me at vegan restaurants. Like immediately up, I freaking love tofu. I like tofu “chicken” nuggets, and I actually like Chick-Fil-A tofu nuggets, too. I like beer battered tofu tacos, and I’m actually into lemongrass tofu, as well.

Yeah, so, uh, we have been obviously vegetarian there for a while, eh?

I have no shame: I love tofu. I simply don’t actually love phytoestrogens and anti-nutrients, so we don’t consume it often. I desire we could, though: anything in regards to the little blocks simply speaks to me, and I can’t actually clarify it. Plus it’s hella low-cost and it remains nice within the fridge for forever. Whole30 Chipotle Beef & Avocado Bowls (Sofritas Copycat, Paleo)

Ingredients
Smoky Sauce

    1 poblano pepper
    1/2 Tbsp. chipotle pepper powder 1 1/2 teaspoons
    3 cloves garlic
    3/4 cup tomato salsa
    2 Tbsp. avocado oil
    1/2 teaspoon salt

Whole30 Chipotle Beef & Avocado Bowls

    8 ounces grass-fed flooring beef
    8 ounces child Bella mushrooms minced
    2 12- ounce bags frozen cauliflower rice or about 6-8 cups, steamed
    2 limes juice of, divided
    2/3-1 cup contemporary cilantro chopped, plus extra for garnish, if desired
    3 avocados halved, pitted, and peeled
    1/2 cup minced red onion plus extra for garnish, if desired

Instructions

    Roast the poblano pepper: Preheat the broiler then location poblano pepper at the oven rack about 4" from broiler element. Cook till blackened on top, then, with tongs, flip over.
